Sweet Sundays with Abrah
Another easy, simple and of course delicious no bake recipe for this week! One thing that makes me appreciate no bake recipes is you can almost eat it right away, because who wants to wait ?!
These bars hold form really well, so they are easy to take on the go too!
-- Crust & topping --
2 3/4 cup quick oats
1/2 tsp salt *omit if using peanut butter*
1/3 cup maple syrup
1 tsp vanilla
1 tbsp water
2 tbsp hemp seeds
1 tbsp chia seeds
1/4 cup almond butter (or nut/seed butter of choice)
-- Filling --
5 oz dairy free chocolate chips or bar (semisweet or high % dark chocolate depending on how "sweet" you want it)
1/2 cup almond butter
Line an 8x8 pan with parchment paper. Stir maple syrup, 1/4 cup almond butter, vanilla and water until smooth. Then stir in oats, hemp & chia seeds and salt. Transfer 2/3 of the mixture into the pan and press firmly.
Then melt the chocolate chips and 1/2 cup almond butter in 20 second increments until smooth.
Pour evenly atop the crust. Then crumble remains atop, gently press down with extra parchment paper and freeze/fridge until set!
